Carving a pumpkin? Don’t throw out the seeds! Check out this recipe for roasted pumpkin seeds, from Bolder Nutrition’s, Christine Steerman, MA, RD, LDN. Roasted pumpkin seeds are a seasonal powerhouse containing protein, healthful fats, magnesium, iron, zinc, and antioxidants.
Simply clean and pat dry your pumpkin seeds, toss in the oil of your choice (avocado oil would be a great one to consider for high heat cooking), and coat with your favorite seasonings.
For a savory take, try salt, pepper, garlic powder, and smoked paprika; or for a sweet take, try maple syrup and pumpkin pie spice. Roast at 375F until slightly golden (keep an eye on these as they can burn easily!). Allow to cool before enjoying. Other than enjoying on their own, these can be mixed into a trail mix, granola, or top your yogurt with for a healthful crunch!
